WIAW: Night Schedule

   

What I Ate Wednesday!
Thanks as always to Jenn for hosting.

I'm on nights in the NICU for the past couple weeks so my meals are really weird right now. Not only do I typically eat a little less healthy, but I eat at totally weird times. When I'm at work for the night, it's pretzels, chips and hummus for dinner. In the morning it's 2 different kinds of fried potatoes. 

Yesterday was a day (night?) off so instead of the cafeteria food these are the things I made at home. 

Breakfast (5:30 AM, after being up all night): Pumpkin Cinnamon Rolls


These are from the More Peas, Thank You cookbook. They're ok though I think they lose something with the altitude baking, just not quite perfect. With some icing though, they're very good.

I ate these with my husband before he left for work and then fell asleep around 6:30.

I woke up about 1 because I needed to go to the post office while they were still open for passport applications. I'm travelling in a few months and my passport's the last thing I never changed over from my maiden name. 

I had to drive to another town because all the post offices here in Albuquerque require appointments for passport applications, so I took Luna with me and we stopped at a new dog park on the way back. It had a separate section for little dogs and she seemed to like it. 



Lunch I guess?: Tempeh bacon wraps. Around 6 it was John's dinner time and I guess it would be my lunch. We made tempeh bacon wraps: pita, melted Daiya mozzarella, tempeh bacon, spinach and tomato. I also had some leftover pasta. 



Dinner: Cinnamon rolls. Before falling asleep I ate a couple more of the cinnamon rolls from this morning. I'll spare you a second identical picture.  

Also tea and orange water. 

Like I said, weird food day. Way healthier than the potatoes I'd been eating from the cafeteria though - at least there was some whole wheat flour and something green.

Sisters!

The illness is worsening. I can't begin to quantify how much phlegm has come out of my face today. I am dang cute right now.

That's not the point of this post though. 

Two of my sisters visited this week! They were on Spring Break and drove all the way from Ohio (where they stopped off the see our other sister) - there's 4 of us. It was much too short a visit, but it was so good to see them. 

The first day we went out to lunch (in the WIAW post):

That afternoon took us thrift shopping. 

I found 3 work skirts for a total of $6.39! what? I still need to wash them, but they're really cute.

There was a lot of selfie failure, these are the best of them:

On the day they came in, I had to go to evening clinic, so John took out the sisters for some live music. We watched some TV and eventually passed out.

On Wednesday we went out to breakfast at Flying Star after sleeping in a bit.

I had to go to clinic in the afternoon, so the girls went to a salon for a bit until I finished. That night we cooked, bonded, watched The Voice on hulu, pretty much were lame but it felt exactly right.

And just like that the visit was over. They left the next morning in order to have plenty of time to drive back to Chicago. 

So I made some Trader Joe's cinnamon rolls.

And said goodbye to my pretty girls.

Miss you already!

The good news is that I get to go visit Shannon in Ohio in about a week, so it's a full month of sisters. 

Today I've been a shut-in, coughing all over the place and drinking piles of tea, but I have a couple fun posts in the works so stay tuned.

New Year's Day in Food

The New Year transition in food:

New Year's Day was kind of weird. As I mentioned, our friends had to leave early. After a quick dog walk and goodbyes, I made some Buttermilk Pancakes for John and I. This is the 500 Vegan Recipes version with flaxseed for the egg replacer.


We pretty much hung out, cleaned a bit, watched TV. I did some yoga/calisthenics and before I knew it the middle of the day had arrived. 

For New Year's Eve dinner I had made this Penne Vodka from Veganomicon - Shannon you would love this and it's really easy. I use cashews instead of almonds because I think the creaminess is nicer. Also, I don't have an immersion blender so I just blend the nuts with a splash of water in the magic bullet until it's a cream and then add it in. The nice part about that is that then the tomatoes don't get as blended up and there's a little more chunkiness to it which I prefer. 

I made a double batch so we would have a lot of leftovers and we had it for lunch with some steamed broccoli.


For snack a little later was an apple.


I was still pretty hungry at 3ish, so we broke out some chips and salsa. This is the Sabra prepared guacamole, which is actually pretty ok for packaged dip, and the salsa is Monroe's, a local New Mexican restaurant. It's my favorite. 


After a fair few of those, I was sitting on the couch watching TV when I suddenly could not keep my eyes open anymore.

So at 4 PM I fell asleep. At 11 PM I woke up and moved to the bed, and then slept until 4 this morning. 12 hours, no big deal.

It makes perfect sense actually. I'd been sleeping about 3-5 hours a night for the past several days because I was having such a hard time switching my body back over to days from my night shifts last week. Usually it's a little easier to get back to days because I have to go to work and I just end up exhausted and it only takes me a couple days. I think because of vacation days I just wasn't feeling pressured to be well-rested and didn't want to miss anything, so I was sleeping very little.

So I feel much better. I definitely needed it. 

That said, I woke up starving of course because I slept through dinner, so I started my day this morning with a banana at 4 AM. 

John has to work today so he's about to leave and I'm going to head out for a run with Luna. 


Not sure what else I'll do today, but I'm just really trying to appreciate it because tomorrow it's back to work for the next straight 15 days. I'm so grateful for these 5 days I had for New Year's, but it is that much harder to go back.
